An AOC for Vacherin Mont-d'Or.

Vacherin Mont-d’Or is now a certified label of origin (AOC), the sixth Swiss cheese to obtain this major distinction. This requires each stage of production, from milk to finishing, to take place within its region of origin - the Vallée de Joux and the Jura foothills in the Canton of Vaud. It lays down strict requirements that producers must respect, under the control of an independent certification body. The AOC protects Vacherin Mont-d’Or from imitations, assuring consumers that it is a fully authentic cheese.

What does it mean?

A label of origin uses the name of a region to designate a specific agricultural product whose characteristics are fundamentally linked to that region. "Origin" should be understood in its broadest sense, referring to natural factors such as geography, soil and climate as well as human factors, traditions and manufacturing techniques that give the product its identity.
Undertaking the long process of obtaining an AOC requires that the producers and manufacturers of a region share a real determination to protect their expertise and their product. In order to file the registration document, they must form a organisation that represents all their different sectors, called an "Interprofession."
The Interprofession of Vacherin Mont-d'Or drew up a product description that defines the region of origin and the key elements of its milk production, processing, finishing, and control procedures.
