Zucchini Rice with Vacherin

Ingredients (4 servings):

  • 200g rice
  • 3 small zucchinis
  • 50g butter
  • 50g ham from the bone
  • 100 g Vacherin
  • 100g Vacherin
  • 1 tablespoon finely chopped onion
  • 700ml broth
  • 1 sachet saffron powder
  • 2-3 sprigs thyme
  • Salt and pepper
  1. Cut the ham (with fat) into small cubes.
  2. Sauté with 20g of butter in a pan.
  3. Wash the zucchini and cut unpeeled into thin slices. Fry the zucchini using the fat from the fried bacon cubes, then set to one side.
  4. Melt 30g of butter in a saucepan, sauté the chopped onion until translucent, add rice and pour in broth.
  5. After cooking for 10 minutes, add the zucchini and season with pepper, saffron and a little thyme.
  6. Add the bacon cubes.
  7. After cooking, add the Vacherin in small flakes and allow to melt. Stir until the cheese is melted.
