Wash the zucchini and cut unpeeled into thin slices. Fry the zucchini using the fat from the fried bacon cubes, then set to one side.

Melt 30g of butter in a saucepan, sauté the chopped onion until translucent, add rice and pour in broth.

After cooking for 10 minutes, add the zucchini and season with pepper, saffron and a little thyme.
