Legend has it that a soldier from the Bourbaki army brought the famous recipe to Les Charbonnières in 1871. Documents in the archives, however, mention deliveries of Vacherin as early as 1845. The Charbonnières cheese dairy, founded in 1865, has been producing Vacherin Mont-d’Or since the first day of its existence, which was matured at the time by Jules-Moïse Rochat.
